Belgian Bun Fresh From The Oven!

If you haven't guessed already, baking is a regular activity in our house. Our baking "roles" are well established - I do the baking and Dan does the eating. This week was no different with Dan's request for some Belgian Bun's for his breakie (I don't think he wanted 18 though..)

You can see from the photo that I made my icing quite thin to prevent the bun from tasting too sweet, if you would prefer yours to be thicker either add more icing sugar or less lemon juice.

Ingredients
450g strong white bread flour
1 tbsp fast yeast
4 tbsp caster sugar
115g Butter
200g warm milk
1 egg
6 tbsp lemon curd 
200g sultanas/raisins 
300g icing sugar
5-6 tbsp lemon juice

How-to

  1. Start by adding your dry ingredients (flour, yeast, caster sugar) and wet ingredients (butter, warm milk and your egg already beaten) to your stand mixer (You can do this by hand however I used the dough hook on my Kenwood kMix). Mix on a slow setting until combined then a medium setting for 5-6 minutes to knead your dough. 
  2. Your dough should become smooth and elastic. Remove from your stand mixer and place in a lightly oiled, covered bowl and leave to rise somewhere warm for 90 minutes. 
  3. Transfer your dough to a floured work surface (be sure to also flour your hands and rolling pin) and roll into a rectangular shape (I split my dough in to two portions and did this step twice as our kitchen work surface is small).
  4. Spread the lemon curd with the back of a spoon until well covered and scatter the area with your sultanas. 
  5. Roll the dough from the long-side until it is a swiss roll shape. Carefully cut your roll into event segments, transferring to a tray lined with baking paper. 
  6. Leave to rise again for at least 20 minutes. During this time bring your oven to temperature, I used 150 degrees celsius in my fan oven. 
  7. Bake for 20 minutes or until golden brown (be careful not to over bake!)
  8. Mix your icing sugar and lemon juice to your preferred consistency. 
  9. Spoon this on top of each cooled bun and top with a cherry. 
Enjoy with morning coffee, afternoon tea or a bedtime treat!
